Gastronomy of the place

Cordoba is a city that brings together four cultures and four gastronomies (Roman, Arabic, Jewish and Christian).

The variety of its dishes, the large number of restaurants, taverns and bars that populate the city and the prestige of its cuisine at the national level are the defining features of Cordoba´s gastronomy, to which the different peoples and civilizations that passed through Cordoba have contributed. Thus, Greeks and Romans introduced the use of olive oil, for which authentic devotion is professed in this land, and laid the foundations of what is known as Mediterranean cuisine. For their part, the Arabs included a taste for vegetables, ratatouille or alboronia, aubergines, artichokes a la montillana, buds with fried garlic, beans with ham, all these dishes are children of the culture inherited from the use of vegetables and oil, lamb with honey, rescued from the Umayyad period, the mixture of sweet and sour flavours, the use of spices and dried fruits and the puff pastry in the pastry, the Cordovan pastry, the quince meat, the sweet wine Pedro Ximenez for desserts, accompanied by fresh cheese. The Christians are responsible for the use of meat and the preservation of the best culinary traditions of the peoples prior to their domination.

Driving directions
